  Miso soup is the staple dish in Japanese cuisine and a bowl a day be it at breakfast, lunch or dinner is the norm. The ingredients and texture of miso soup vary enormously from a thick dark brown hearty soup with pork and chopped vegetables to a thin clear stock. A thin miso soup is still very nutritious and with a very low fat content, it is also easy and fast to make. Miso paste and bonito flakes (fish flakes) are available in large supermarkets and Asian grocers.

Miso soup

Ingredients:

6 glasses of water
3 tbsp white Miso paste
2 tbsp bonito flakes
2 chopped spring onions
1 tsp doshi or fish sauce/stock

Method:

Boil the water, add all the ingredients, simmer for 10 minutes, strain, garnish with some left over chopped spring onion and serve.
